Found this at my library and the concept drew me in I felt myself nodding along with Katie s intro I too have the challenge of cooking for me man me want meat while accommodating for my own veggie life The dishes are not overly complicated and didn t require any ingredients I wasn t familliar with The recipes me and my guy tried included the tex mex scramble for one, Chili Roasted Sweet Potato and Black Bean Tacos, BBQ chicken Pizza with Whole Wheat Flax Crust my first try at pizza crust, yay , Sesame Soy Lettuce Wraps, and Asian Peanut Broccoli Quinoa.Nearly every recipe we tried came out pretty tasty, filling and won the approval of my man The peanut butter and banana oatmeal made for a great work lunch Portable, freezable and super filling topped with yogurt The Shredded Brussels Sprout Orzo salad was genius why had I never thought of shredding my Brussels sprouts before The Mac and Cheese was the only total flop for us The consistency and flavor just did not seem right Nom Yourself s cashew cream mac and cheese still reigns supreme in our household Yes, some of the recipes are a little basic and stuck in the quinoa kale vegetarian way of thinking, but sometimes that s all you need for a dinner It s apparent a lot of care went into the layout of this cookbook Each recipe has a a full color, full bleed photo that really showcases the finished products There is so much I neglected to try due to the seasonal ingredients but I plan on revisiting this book again There are a few good recipes in this book I would recommend borrowing it from a library as there aren t too many new or really inspiring recipes As someone with food allergies and a kid, I m always looking for different approaches to food. I know this is vegetarian, but geez, this author really doesn t know how to eat without dairy does she She really just relies on dairy, and ignores the plethora of other amazing vegetarian and vegan sources of much healthier protein, like beans, lentils, nuts, seeds, split peas, vegetables, leafy greens.. This book has high protein vegetarian recipes, exactly what I was looking for It does not feature vegan recipes I found about a dozen recipes I plan to try, like Brussels Sprouts Quinoa Gratin and Tex Mex Tofu Scramble The ingredients are familiar, and most quantities allow for no waste Some recipes have a long list of ingredients, but the instructions are always short and easy. I want to try every single recipe in this book. Too reliant on quinoa for my tastes.
